the college

“The College” is currently a work under construction. Essentially it will be a working restaurant where the chefs are the students (strictly monitored by our hugely experienced chef/tutors of course). An average day will comprise practical cooking from 8am to noon, then lunch in the restaurant to sample and criticise the fruits of the morning’s labour.

Full-time students will spend the rest of their day diversifying into their own area of special interest. This could include designing meals for chalet cooking, dinners for beginners or even exotic meals on a student loan! All students will receive instruction in menu-planning, how and when to use herbs and spices, cooking meat, fish and vegetables to perfection, advance preparation, portioning, dealing with disasters, basic hygiene, first aid and most importantly, wine-tasting and matching wine with food from all around the world!

If you have a group of friends, up to six people we can tailor make a day’s course for you so do contact us for advice. Our kitchen is simply a lovely environment to work in – you can even choose your own chef to oversee your day!
